Sturdy Honing Steel My kitchen knives are in desperate need of professional sharpening, but in the meantime, this steel honed them to a nice enough edge that they no longerfeel like machetes. It s sturdy and works well. My only complaint is that it s a little short and feels like you can t get a full swipe along the blade. I would recommend getting at least 14 for ease of use. 4Giant steel.. Great steel; it's a monster. I thought the whole thing would be 12", including the handle, but the steel itself is 12". A little more than I need, as I'm sharpening kitchen knives, not Samurai swords, but it does the job. 5Ideal for its purpose Each Tuesday I run a soup kitchen in the Upper East Side for the homeless. Soup kitchen is a misnomer as we serve pretty fancy meals (on a budget, mind). The kitchen used is a commercial grade one, fully stocked. But I got so sick of trying to hone the knives there on the steels supplied, which are caked with kitchen grease and god only knows what, that I bought this. That and for use with my own beautiful German steel knives, but lets highlight the charity stuff a bit more.The steel is, as others mentioned, long, at 12" of steel, PLUS handle, and it does a really lovely job of honing up my knives. It's a great sound hearing steel being properly honed. For the price, I'm thoroughly happy with this purchase, as here in NYC, they are significantly more expensive in stores. 5A Fine Steel I am a professional Meat Cutter and needed to replace the steel I had for over 20 years. I must say this is a fine quality sharpening steel for the price. I don't think you could find a better deal of the same quality, I am very pleased with this purchase. Every one in the shop I work in wants to use this, quickly became the only steel used now. They are all going to have to buy their own here soon.If you are a professional Meat cutter Buy It, you wont be disappointed. Very nice honing rod. Ended up buying the 14in because it was around $3 cheaper than the 12in. No regrets.The 14in is realllly long tho, barely fits in our kitchen drawer by about half and inch. 5Extremely High Value! This product is of high quality. In consideration of the price point,at the time of this review of $10, I will have to agree with the many other reviews that it's a fantastic value. Watch a few videos on YouTube if you're not familiar with it's best useage options. When done regularly, this will help to keep your blade from needing a full sharpening for a significant amount of time. 5My new favorite steel for stainless. So I am a knife sharpening nerd. Big time. I've gone to countries that don't even export knives to make customs.I have literally more than a dozen steels, from the F dicks and stainless focused polishing steels to all variety of ceramics and specialized steels like those match my wustof, Arkansas stones, etc... there is a reason for everyone and each knife steel seems to respond best to a particular abrasive.for a Cheap stainless steel, or even a relatively nice steel like a mercer, Victorinox or wustof, this is the best steel I have ever found. I dislike the patterns on forschner and Victorinox steels, I think their knives actually do better on the parallel lines of this steel at a relatively coarse grit. the wustof steel is finer and does not create so aggressive an edge. Ceramics do a good job for fancier stainless allows but anything under 62 HRc should respond well to this if it had some ductility.the 14" size is fantastic, it is much preferable to a 12" at home for any size gyutos though it does not travel well and won't fit in many knife rolls. I don't have one long enough that it doesn't protrude and I have several.the lines will eventually lose their aggressive tooth I am sure if the steel gets banged around but I've already ordered a second and may well give one as a gift.this would probably be the best steel anyone could ever learn on because it is not too coarse like a ceramic, but will actually be very effective in moving rolled edges and creating a burr. it may remove the most metal of any steel I have, though the movement of ductile steel is much more pronounced and much more effective in stainless than any ceramic. And with less damage to the edge grind, if any.I definitely recommend this steel to anyone, and it is the cheapest I've ever bought of it's kind. The shorter Ultrasource polish steel is also very useful, and the two work great in combination with each other, with the polish steel to refine the new burr from this. 5sharper I do cook often, but my knives weren't sharp. So I would struggle cutting chicken or fish. Once I bought this sharpener, using my knives became easier to use when cutting chicken, fish, etc. I enjoy cooking a meal. I'm able to keep my cutting utensils sharp, with less work. It makes a big difference! I would recommend this sharpening tool, it's easy to use. If you're not confident at first start out slow, I did. Now it's a breeze, give it a try. 5Gets the job done Purchased this because the Wusthof sharpening steel we had been using had 'Wusthof' imprinted in the steel. This created divots which could catch knives as you were honing them! After worrying constantly about chipping our knives catching the imprint, we replaced that steel with this item.First impressions - 12 inches is long! Much longer than many of the steels you'll see coming with knife sets. Honing 10 inch knives is a breeze on this steel regardless of what your honing stroke looks like. The steel is smooth and effective, this works just like any other honing steel but for a great price. There are no imprints on the length of the steel so you can use its full length.The handle is a little less than ergonomic, but it gets the job done. The hook on the end is useful if you want to hang this, but the guard at the end of the handle is so thick that it pushes the steel outward from the wall. We just keep it in our knife drawer. 5Keeps my knives sharp. I do have a couple of hand-held sharpeners that work pretty well, but I wanted to try a steel to look like a real chef and impress my friends. It s actually pretty easy to use. I just give my knives a few swipes on each side (I like the technique where the blade of the knife trails the swipe). I was surprised at how much difference there was in the sharpness after using this steel. 5
